Chef Anthony Ferrando is a Jersey-boy who’s come home again. After studying at the Peter Kump School of Cooking, he began his kitchen career in NYC working at Petrosian. He began his own catering business then moved on to Rao’s. as executive chef. He spent time at Tuscan Square, Coco Pazzo, Coco Opera, and Li Madre as part of Toscorp. From there he moved to the Reebok Club as Executive Chef. He has now partnered with Judy Matthew to open Dish in Red Bank. Dish features New American Cuisine with a Mediterranean twist highlighting Chef Ferrando’s Italian heritage and extensive travel through southern Italy. Chef Ferrando defines American cuisine as varied and eclectic as the country and his menu often features dishes reflecting Southern American, Mexican, Indian, Asian, French, and European flavors..
